STICKY PEANUT BUTTER TOFU Serves 2 20 min 0.5cup Brown Rice 200g Firm Tofu Sesame Oil 2 Garlic cloves 2tbsp Peanut Butter 1tbsp Golden Syrup Pinch Dried chilli flakes 0.5 Lime 2tbsp Soy sauce Optional: Handful Tender-stem Broccoli Optional: Handful Salted Peanuts 1 - Get the rice ready, either 1:2 rice:water ratio and boil for 20 min in salted water with lid on, or 1:1 pressure cook 15min. 2 - Pan fry tofu in splash of sesame oil and garlic over a medium heat 3 - If using steam the broccoli 4 - After a few min, when tofu starting to brown add peanut butter, golden syrup, chilli flakes and a squeeze of lime juice and soy sauce. 5 - Fry for a few more minutes until sauce thickens and sticks to the tofu. 6 - Garnish with crushed peanuts, serve on the side of rice and broccoli.
