Pancakes!!! 10 min Makes 6 Medium Pancakes 2 tbsp White Vinegar 250ml Soy Milk 1 tsp Baking Powder 1 tsp Bicarb 150g Self Raising Flour 30g Sugar 20g Vegan Margarine 1 - Start pan heating 2 - Mix the 2 tbsp of white vinegar with the soy milk, give brief stir with fork it should thicken almost instantly 3 - Mix together all the dry ingredients 4 - Melt the margarine in the pan and then pour in to the soy milk mix 5 - Pour the liquid mix into the dry ingredients, mix with a fork (but try not to whisk the air out, if this happens leave to stand for a bit until bubbles start forming on the surface again). 6 - Using a large spoon (maybe an ice cream scoop or similar) spoon mix in to pan. Consistency should be thick, but still easily pourable...not runny (this would result in thin, flat pancakes).
